About the Author

Jyoti Nikunj Parekh is a well-Known Figure in the field of vegetarian cooking. Since 1969, she has been teaching Indian and international vegetarian cooking , along with the art of fruit and vegetable carving, to a large number of students.

Apart from being a busy housewife and mother, Jyoti regularly teaches the art of cooking, bonsai, candle-making and gift wrapping. There are demonstrations of her art at various places in India. She has also displayed her skills in many other cities around the world - Tokyo and Yokohama (Japan) Boston, New York, Honolulu and Minneapolis (U.S.A.); Toronto (Canada); London, Heidelberg, and Antwerp(Europe). A regular contributor to many leading periodicals and newspapers, both Indian and international, she has also done a number of radio and television programmes.

Jyoti has been a pioneer in the field of miniature tree-growing in India and has co-authored the books Wonderworld of Tropical Bonsai and Wonderworld of Bonsai and Saikei, with her husband, Nikunj.

One of her books, Wonderworld of Gift Wrapping, co-authored with her daughter Sonali, has proved to be very popular.

Her first book on culinary art, titled Wonderworld of Vegetarian Cooking, is in its fifth reprint. She presented her second book on vegetarian cooking , Wonderworld of India Vegetarian Cuisine with time-tested India vegetarian recipes as well as modern innovative ones. The book was well received and is now in its second revised printing.

She has also written a book Wonderworld Desserts, with exclusively eggless dessert recipes, which has proved to be very successful book.

Her fourth book Wonderful Microwave Cooking, was published in 1997 with a wide collection of vegetarian microwave recipes, along with the extensive information on the handing of microwave ovens.

Introduction

The recipes introduced in this book have been prepared using wholesome, mostly fresh, and readily available ingredients. Vegetarian food sustains everyone without hurting any living creature, and at the same time it gives pleasure to one all. There are certain combinations of vegetables, legumes, pulses and grains, that are necessary for sound health. These are harmless alternatives provided by mother nature.

Wonderworld of Indian Vegetarian Cuisine is a treasure trove of traditional as well as new recipes, which can be used for all occasions. The dishes are satisfying to even the most fastidious palates. The book introduces exciting recipes for the benefit urban cook, who prefers to have parties with a buffet-style service. A party can thus start soup and starters; at the same time, the table can be laid out with puris, curries, sweets and salads.

The recommended quantities given it this book are sufficient for restricted numbers. The same recipes, if made for a buffet party menu, will suffice for 20 servings as the guest at a buffet party usually partake a little of every dish laid out on the table.

This book is not intended to be a low calorie diet book ; it is for a healthy normal diet with one special chapter on Healthy Snacks. If one wants to make low calorie dishes, one is at liberty to substitute the ingredients with low fat ingredients without varying most of the basics in the recipe.

Preparation and cooking times have been given to facilitate planning of your busy day. As everyone works at different speeds and with different gadgets, the preparation times give should be used only as a guide.
