Preface
Food is an important part of health. Knowledge of food is necessary to prevent disease and remain healthy. Nature has never deprived any animate of food. Man himself on his own started adopting unusual, unsuitable and wrong food and severely punished himself by bringing upon himself thousands of diseases. Nature has imbibed such goodness in every animate's body and food which enables them to keep themselves healthy and lead a long life. Cows get good protein and calcium for their bodies by merely eating green grass. The elephant maintains his huge and flabby body by merely eating grass and leaves. Similarly for man also, nature has created such fruits, vegetables, dry fruits, etc., through which man can get complete nutritious elements for his health, body and longevity. The aim of man for having food is not merely to fill the stomach, achieve health or satisfy taste but also for mental and behavioural development. Food has deep relations with our conduct, thought and behaviour. Even today the ancient saying, "As we eat, so will be the state of mind" holds just as true. A man's interest towards different type of food is believed to depict his behaviour and character. Therefore our aim towards food is to consume those substances which enhance qualities like affection, love, kindness, non-violence and peace for physical, ethical, social and spiritual improvement. In the manner by which red blood corpuscles die and are replaced by new cells every minute, similarly every cell and tissue of our body is replaced by new ones in approximately six years, whose quality depends on our food. In addition, food must have such substance which enables us to resist diseases and there should not be any hindrance on excretion of waste products, faeces and toxins from the body. There should not be toxic, unhealthy and stimulating elements in food as these elements spoil the mental balance, give birth to impulses and make them aimless and unrestrained. The medical world has become so advanced that organ-transplant has become a common thing. To find the solution to even the most serious diseases, research centres have been opened. In spite of that, diseases are increasing day by day. What is the reason of the continuous increase in obesity, heart diseases, diabetes, cancer, bone diseases and mental diseases? There is only one reason-we keep doing new research to treat the diseases. But neither do we implement the ways to prevent it, nor do we try to remove its cause. If we pay more attention to the prevention of disease rather than finding ways to cure it, then the entire humanity may be healthy and long lived In the modern age one gets to see and eat various types of food which do not have any trace of nutritious element. These days the consumption of fried, spicy and unnatural food products is constantly increasing. By this type of food, necessary elements get destroyed and this supports the weakening of the body. Normally in homes today, chapatis/breads are being roasted on the flame of LPG gas, by which some poisonous chemical element stick to the bread/chapati and are proving to be supporters in destroying our health. Many artificial colours and chemicals are also being added to food products. Poisonous chemicals and gases are found in abundance in the beverages available in the market. In spite of this, the young generation is constantly attracted towards them. Boys and girls often feel proud to buy and consume expensive chemical-filled tinned food stuff and tasty canned beverages. The effect of such polluted food is clearly visible on our body and mind.
