My plate for the day', developed by ICMR-National Institute of Nutrition (NIN), is a health-promoting concept that provides information on the importance of vegetables in our daily diet. Vegetables, including green leafy ones, play an essential role in our daily diet. It is also considered a vital part of our food group system. Recent advances in nutrition have suggested that vegetables and their bioactive phytonutrients optimize immunity and provide protection against many communicable and non-communicable diseases.
This book is a handy compendium on the nutritional values and the health benefits of some of these wonderful foods. The book is designed in a way that common people can easily understand, and a section of the chapter on each vegetable contains recipes for that vegetable, which adds a unique flavour to the book. Hence, regular consumption of various vegetables needs to be firmly emphasized.
The idea to publish this book was put forth by Dr. M. Maheshwar, HoD, Extension and Training Division. The organization supported his immense enthusiasm and expertise in nutrition education, and this book is the result of his effort. The authors/experts involved in bringing out this book had closely examined the salutary effect of vegetable consumption on our health. I hope that the members of the scientific community, the students of nutrition, and the general public will find this book informative and useful.
Vegetables are one of the utmost crucial components of the food group, occupying an important place in the "My Plate for the Day" concept. According to several studies, vegetables were found beneficial for human health as they are loaded with micronutrients such as vitamins, minerals, and dietary fibre. Vegetables are used as a part of our routine diet all the time. Hence, it is essential to create awareness among the community on the health benefits of consuming vegetables.
In an attempt to educate the public, ICMR-NIN has developed an exclusive compendium on some of the locally available common vegetables across the country. This compendium provides information on 26 popular vegetables. Each chapter deals with one vegetable, divided into five sub-sections. Section I gives basic information about the vegetable and section II gives on its nutritional content derived from "Indian Food Composition Tables" (IFCT) published by ICMR-NIN (2017). Section III describes the health benefits of that vegetable in greater detail, and section IV provides information on the aspects relating to its avoidance in a given health condition. The last section deals with the recipes made using that vegetable and show how easily it can be included in our everyday diet.
This book would be useful for all those who consume vegetables and who intend to know further about the health benefits of these wonderful constituents of a daily diet. The book would also be helpful for nutrition students, the scientific community, and the people working at the grass root level imparting nutrition education.
