Kitchen is a laboratory of flavour where the rules of health are bested. In the modern language we can also call it a laboratory of health. Mrs. Kothari considered anna a deity. She disliked remnants or leavings of uneaten food. Her recipes also pass the test of the standards of health. She herself ate very little. She ate on alternate days. She had an amazing sense of self-discipline. Remaining hungry for the whole day and cooking tasty meals was her natural forte. Based on her long experience, she knew it well which type of food was to be cooked in a particular weather. what would be the mixture of the spices, ghee, oll and various other components, how it should be cooked, in which dhatu it should be cooked.

Mrs. Kothari cooked food with great joy and persuaded all with great affection to eat. As a matter of fact she had given a new dimension to the usefulness of the traditional food. That was why her kitchen was full of so many varieties and juicy items.
