PREFACE
This book book was not born of ambition, trend, or timing. It emerged from a pause, one that life gently yet firmly asked me to For most of my life, food has been my language. I have spoken through flavours, textures, aromas, and presentation. I understood cuisine as craft, discipline, and expression. I knew how to excite the palate, design memorable menus, and create experiences that lingered long after the final bite. Cooking was never merely a profession. It was my identity. My world revolved around kitchens, service hours, and the quiet satisfaction of a perfectly executed plate.
Yet somewhere along this journey, almost imperceptibly, I drifted away from the most sacred relationship food offers us, the relationship with our own body.
The path that led to this book began with a simple conversation that quietly shifted the direction of my life. It was neither dramatic nor sudden. There were no grand revelations, only a calm consultation with my doctor, Dr. Arun, HOD Panchkarma Department, CBPACS, New Delhi, who gently reintroduced me to the science of Ayurveda and its foundational understanding of the three doshas: Vata, Pitta, and Kapha.
Like many, I had heard these terms before. They felt traditional, distant, and only loosely connected to modern life. But on that day, they ceased to be abstract concepts. They became explanations. They became context. They became mirrors reflecting patterns I had long ignored: unexplained fatigue, digestive discomfort, restlessness, and a subtle imbalance that professional success alone could not resolve, dh
For the first time, I understood that food is never universally "good" or "bad." It is deeply personal. What nourishes one body may disturb another. What energies today may exhaust tomorrow. Ayurveda did not offer me a restrictive diet. It offered awareness. It did not impose discipline. It invited understanding.
